Coconut toffees
a.k.a coconut rocks are square-shaped toffees made out of coconut flakes and sugar syrup. It is traditionally coloured in pink and green, but the modern-day ones have a vibrant twist and are coloured in cyan shades. This treat is served at many Sri Lankan festivals such as Sinhala and Tamil New Year and Christmas. Have a look at how to make this:
What do you need?
- – 750g of sugar
- – 750g of coconut scraped
- – 1 tin of milkmaid
- – 1 ½ cup of water
- – 2 teaspoons of vanilla
- – Colouring of your choice
What to do?
- Step 01. . . On low heat, add water and sugar and make a thick syrup.
- Step 02. . . Add the coconut flakes and mix it thoroughly.
- Step 03. . . Add the milkmaid next.
- Step 04. . . Add the vanilla & colouring. The amount of colouring depends on the darkness of the colour needed.
- Step 06. . . Keep it on low heat for 5-7 mins more.
- Step 07. . . Switch off the fire and keep on mixing for 10-15 mins.
- Step 08. . . Scoop all the content out and flatten it on a tray.
- Step 09. . . Cut out squares or diamond shapes as desired.
Milk Toffees
look like little chewy caramel squares, but are not chewy at all. They are tiny delights with chopped cashew nuts that melt in you’re mouth. Two milk toffees are never alike, different people like it made differently, some like it so soft that it crumbles in your hand while the others like it with less butter which makes the sweets a tad bit harder.
What do you need?
- – 400 g sweet condensed milk
- – 220 g sugar
- – 1 tbs vanilla essence
- – 1/4 cup water
- – 2 tbs butter.
- – 100g chopped cashew nuts
What to do?
- Step 01. . . In a non-stick pan pour water and add the sugar. Place the pan on medium heat and stir till the sugar dissolves.
- Step 02. . . Add the tablespoons of butter and mix thoroughly and then add the sweetened condensed milk and stir again.
- Step 03. . . Keep on stirring and when the mixture starts to boil, switch to low heat.
- Step 04. . . Stir till the mixture gets thick and easily comes off the pan.
- Step 05. . . Wash two cut banana leaves and grease it well with butter.
- Step 06. . . Spoon out the mixture and put it on the banana leaf.
- Step 07. . . Use another banana leaf that is greased to spread and even the mixture.
- Step 08. . . While it’s still warm cut into squares or diamond-shaped pieces.
Once it cools, this task will be much harder.
